SHRIMP SALAD WITH CITRUS CHIOS MUSTARD

INGREDIENTS

Mixed salad (1 packet supermarket leaves)

4 shrimp, medium size, peeled and cleaned

20g CITRUS Chios Mandarin mustard (shake well before use)

20g vinaigrette (homemade or shop bought)

4 cherry tomatoes, thinly sliced

2g salt

METHOD

Cut the shrimp into a butterfly shape, open and, remove the veins.

Blanche the shrimp in lightly salted water for 1 minute, until they turn red.

In a large mixing bowl, mix the salad well along with a pinch of salt.

In a second bowl, mix the mustard with the vinaigrette; pour some over the salad and the rest over the shrimp.

Take a sliced tomato and a shrimp and thread them onto a toothpick. Repeat for the remaining shrimp.
