CAULIFLOWER IN CITRUS TOMATO SAUCE

INGREDIENTS
700g cauliflower florets, stalks removed
30g olive oil
1 cinnamon stick
2 pieces, star anise
100g CITRUS tomato sauce
250g water
1 sprig, thyme
30g butter
7g salt
1g pepper
METHOD
Pour the CITRUS tomato sauce into a medium size saucepan. Rinse the jar with the water and add this to the pan along with the salt, pepper, olive oil, cinnamon stick, star anise, thyme sprig and allow to come to a gentle boil.
In another pot, bring plenty of salted water to the boil and let the cauliflower cook for 4 minutes. Cooking time will depend on the size of your florets.
Use a metal straining spoon to remove the cauliflower from the water, add these pieces to the tomato sauce and allow to simmer for a further 3 minutes.
Remove the cauliflower from the sauce.
Add the butter to the sauce and allow to simmer until the sauce has thickened; then pour this over the cauliflower.
