CHICKEN THIGHS WITH CITRUS CHIOS MANDARIN MUSTARD

INGREDIENTS (Serves 4)
1kg chicken legs, deboned
250g onion, chopped
50g olive oil
250g vegetable broth, no sodium
100g CITRUS Chios Mandarin mustard
4 cherry tomatoes, halved
7g salt
120g white wine
Handful rocket leaves, tender
METHOD
Stir the CITRUS mustard into the vegetable broth and blitz in a blender.
Pour the olive oil into a pan and sauté the onions over a low heat, until they begin to turn transparent. Add the chicken and white wine, simmering gently until the alcohol evaporates.
Cook gently for 10 minutes. Add the cherry tomatoes, the vegetable broth mixed with the mustard and season with salt. Cover the pan and simmer for a further 15 minutes over medium heat.
Remove the pan from the stove. Allow to cool a little before placing the chicken on a dish and pouring the sauce over it.
Finish with a few rocket leaves before serving.
TIP
This dish is delicious with grilled vegetables, rice, pasta or noodles.
